Ingredients
  

  • 500 g Butternut squash (17,6oz).
  • 700 g All-purpose flour (24,7oz).
  • ¼ cup Olive oil.
  • 2 ½ tsp Salt.
  • 1 ½ tsp Baking powder.
  • Cooking oil for frying.

Instructions
 

  • Boil the butternut squash in plenty of water with 1 teaspoon of salt.
  • In a bowl, mix the all-purpose flour with the olive oil, 1 ½ teaspoons of salt, and baking powder. Then, using a spatula, mix in the cooked and mashed butternut squash while it's still hot.
  • Onceit cools down a bit, knead the mixture with your hands until you have a doughthat doesn't stick to your hands. If needed, you can add some of the water fromthe squash to moisten the dough.
  • Rollout the dough using a rolling pin. You can use a round mold, a plate, or simply divide the dough into small portions that you can flatten and shape into rounds using the rolling pin.
  • Pokethe dough with a fork before frying.
  • Pour plenty of cooking oil into askillet for frying. Heat the oil over high heat until you can test its temperature with a small dough ball – it should sizzle. Once you start frying the fritters, reduce the heat to prevent them from cooking too quickly.
  • Once they're golden on both sides, take them out of the oil and let them drain on a wire rack or paper towels to remove excess oil.
  • Now, they're ready to be enjoyed – dig into these delicious pumpkin fritters!
