Ingredients
500gbeans (17,6 oz)(Turtledoveor white beans)
500gButternut squash (17,6 oz)
2unitsTomatoes.
1unitOnion.
Spaghetti noodles to taste.
1tbspolive oil.
1tsporegano.
Salt to taste.
Instructions
The night before or at least 12hours earlier, soak the beans in plenty of cold water. When it's time to cook, rinse the beans and put them in a pressure cooker (or pot). Add boiling waterand cook for 30 minutes until the beans are soft.
Cut the butternut squash into chunksand add them to the pressure cooker (or pot), cook for 10 minutes.
Meanwhile, you can prepare the sautéed mixture. For that, finely chop an onion into small cubes.
Heat up a skillet with the olive oil and sauté the onion until it's soft and translucent.
Grate the two tomatoes and add them to the previously sautéed onion.
Along with oregano and salt to taste.
Once the sautéed mixture is ready, set it aside.
After the 10 minutes of cooking the butternut squash, take it out of the cooker and mash it in a bowl.
Without covering the cooker, add the noodles that have been broken in half by hand and cook for 9 minutes.
Mix in the sautéed mixture with themashed butternut squash in the cooker and stir. Once the noodles are cooked,turn off the cooker and let it sit for about 10 minutes before serving.
